Ripe (yellow) plantain is a common food in Western African countries like Nigeria, Cameroon, and
Ghana. Plantains are technically fruits, but much like tomatoes and unlike bananas, they are eaten
and cooked as if they were vegetables. They’re a rich source of fiber, vitamins A, C, and B-6, and
magnesium and potassium minerals. Plantains are rich sources of complex carbohydrates,
vitamins, and minerals, and are easily digestible.
